In
the category of unprocessed teas are the White and the Green Teas. These
teas experience just enough processing to stop the enzyme action
(oxidation) in the freshly plucked tea leaves. The goal with the white
and green teas is to maintain the highest possible polypheynol content.
To do this freshly plucked leaves are rushed to processing factories
from the tea gardens where minimal heating, pan frying, or steaming is
done to stop the enzyme action in the leaves. The unprocessed teas offer
a pale yellow color and a sweet vegetal scent. It is said in China that
White and Green Tea are like young people, the younger the better.
