The teas that make up the semi-processed teas are more commonly known of
in the west as "Oolong Teas”. The name for Oolong teas was derived from
the Chinese "Wu Lung” meaning "Dark Dragon”. Over centuries the Chinese
growers and processors learned that by altering the conditions that the
leaves were subject to before and after plucking gave the leaves
distinct tastes. Over time, many "recipes” have matured and evolved into
the fine teas available today. The "Tea Master” carefully monitors the
processing of the Oolong tea, and at the precise desirable time stops
the oxidation process by applying heat. The tea may be left in that
state or undergo some additional "toasting” or "roasting” to add
distinctive flavor. Oolongs offer a delightful sweet fragrant aroma and
taste, and are closest to the white and green teas for polyphenol
content and health benefit. It is said in China that Oolong teas are
like middle aged people, half experienced, half mature.
