Teas that are allowed to fully oxidize are referred to as “fully-processed”. These teas are often oxidized over night, and are often subject to secondary processes like additional baking/toasting to add specific flavors. Fully-processed teas have a rich amber color when brewed, and offer a very full flavor. Although not as high as in the unfermented and semi-fermented teas, the fully-fermented teas still offer good polyphenol benefits. It is said in China that fully processed teas (Black Teas and Pu’ers) are like older people, fully mature, experienced, that they stay for a long time, and have a sweet aftertaste.

Centuries ago, to preserve tea on the long journey from Yunnan to the big cities on the China coast, tea merchants began pressing molds into molds, forming bricks, plates, cakes, and other shapes that were easy to package and durable for the long difficult journey.  This ZGC “Premium” selection is different from the selections above as it comes in the form of a solid 400 gram plate that has been pressed in a mold.  To make the delicious Pu’er Tea liquor, a piece is broken from the plate then infused as is the loose selections above.  A great selection that will add variety and enjoyment to your tea experience for ~$.11/cup.
